I am totally addicted to my crockpots. (yes they come in all sizes shapes etc as to what I need!) I need Tom to take pictures of them to show you! I have giant 8 qt crock pots that I go through at least 3 a year. (The glaze on the crock cracks from repeated use and running.) They tend to get pretty beat from all of the cooking I do with them.
This week is chicken noodle soup. Everyday! We are so sick. I make a broth in the 8 qt. crockpot after cooking chicken in it. Then I let the broth heat to a boil. Modern crock pots get much hotter. I boil the macaroni (6 cups) in the broth about 30 minutes. (stirring now and then) I take the macaroni out with a huge strainer spoon I found! Then I add more water to the broth adding a few bouillon cubes, garlic and onion. I pick the chicken, chop the carrots that had also cooked in the crock pot in broth. I cook the carrots whole and then when cooked the knife just slides through them as I stack them in a glass Corelle baking dish and slice away. I hate chopping raw carrots! Here in MN I can cool the noodles right outside my door to shock them and stop them from continuing to cook. (you can't rinse them- they'll lose flavor) Only problem is that at -5 degrees they can start to freeze! LOL! I run out and stir them up, and cool them in about 10 minutes. Add the chicken, carrots and refrigerate. The broth boils till lunch. We don't need to heat it up when we "marry" the broth to the noodle/carrot/chicken. The broth is boiling hot!
Mornings I used to make individual bowls of oatmeal for everybody who eats breakfast. That was 11-12 bowls. Measuring out the oatmeal, adding extra things like cinnamon/sugar or a dollop of jelly. Time consuming!
I had tried steel cut oats in the crock pot. I have a great oatmeal creme brulee recipe, but it's very time consuming. :o( And we've thrown apples, sugar and cinnamon with oatmeal in the crock pot- yum! But our very favorite really healthy super easy recipe? Pineapple oatmeal!
I have the coolest rectangle crockpot. So when the oatmeal is done you cut it like a cake! As it cooks it gets a really nice crust on the outside edge the kids love! I adjusted the recipe to serve 11. You can adjust it by halving or quartering it. :o)
1 can crushed pineapple
6 eggs
10- 3/4 cups of course ground oats
7 cups milk
Just mix it all together! Pour in the crock pot!
(Spray crock pot with cooking spray)
Cook on low 6-8 hours (less if you make less) My crock pot switches to warm if it finishes before I wake up!
Slice- pour milk or cream on it if it's too dry. It seems once it comes out of the crock pot it "dries" out some.
Now I wake up, slice, serve, and sing some Chris Tomlin worship songs with my boys as I feed them! ;o)
Most oatmeal I make the kids beg for suuuuuugar!! This one they don't even notice- there is no sugar!

I use a rice cooker...very easy if you ever need another idea. I add cinnamon, apples and raisins near the end of the cycle. It's really good. But, both boys still can't do the fiber so I have to make them something else. I'm learning how to make congee for them in it to mix eggs into. They love it.
